Strucchi

Strucchi revives the work of Arnaldo Strucchi (1853–1913), a Piedmontese oenologist who wrote Il Vermouth di Torino, a manual that is still used as a guide to making vermouth. In 2024 Paolo Dalla Mora, working with Gaja Distribuzione, republished the book and recreated Strucchi's recipes, with less sugar and more botanical character than most modern vermouths.
