Mezcal Derrumbes Oaxaca Espadín & Tobalá is a joven mezcal produced in Santiago Matatlán, Oaxaca, crafted to showcase the interplay between cultivated and wild agave. Made under the direction of Mezcal Derrumbes and master distiller Javier Mateo, this expression blends Espadín (Agave angustifolia Haw) with Tobalá, delivering balance, complexity, and terroir-driven character.
The agave is cooked in an underground stone pit fired with black oak, crushed by tahona, fermented in wooden vats with natural fibres and pulque as a yeast starter, then distilled in copper pot stills. After a minimum of 60 days resting in glass, the mezcal is bottled at 48% ABV.
On the nose, expect soft smoke, roasted agave, herbs, and mineral notes. The palate is structured and expressive, with cooked agave sweetness, gentle smokiness, herbal lift from Tobalá, and a dry, mineral finish. A precise, traditional mezcal suited to sipping neat or serious mezcal cocktails.
