Sotol Cedrosanum by La Higuera

Not mezcal. Not tequila. Sotol — Mexico's most underrated spirit, and La Higuera's Cedrosanum is one of its finest expressions. Produced in Aldama, Chihuahua, from the wild Dasylirion cedrosanum plant, this is a spirit made entirely by hand and by nature.

The plants are cooked outdoors in an oven, ground by hand with an axe, naturally fermented with wild yeasts in large pine wood vats, then distilled twice in copper alembic stills. Zero shortcuts. The result is mineral and complex — smoked grass, cedarwood, caramel, and a dry, balanced finish.
