Kenkonichi Junmai-shu is a pure rice sake from Daisen Shuzō, a brewery nestled in Tottori Prefecture on the western coast of Japan's Honshu island. The brewery draws its water from the pristine snowmelt of Mount Daisen — one of Japan's most celebrated natural water sources — giving this sake its characteristic clarity and softness.
Junmai-shu means "pure rice sake": no added alcohol, no shortcuts. Just rice, water, koji, and time. The result is a sake with real depth and honesty — a clean, gentle nose of steamed rice and subtle floral notes, followed by a palate of soft umami, mild sweetness, and a smooth, lingering finish. Versatile and food-friendly, it pairs beautifully with everything from sushi and sashimi to grilled fish and light vegetable dishes.
Serve chilled for a crisp, refreshing experience, at room temperature to let the flavours open up, or gently warmed (nurukan) for a rounder, more comforting character.
