Nonnoko Levure de Vin is a distinctive honkaku shochu crafted using wine yeast (levure de vin), giving it a uniquely aromatic and refined profile. Produced by Nonnoko in Japan, it blends traditional shochu techniques with a more modern fermentation approach.
The use of wine yeast lifts the aroma, bringing floral and fruity notes rarely found in classic shochu. On the nose, expect delicate blossom, light pear and subtle citrus tones. The palate is smooth and elegant, with gentle fruit character, soft sweetness and a clean, dry finish that remains highly drinkable.
